Involved vs Committed
      The difference between the sweet potato and the yam is that the sweet potato's plant is involved... sort of -- and the yam's plant is committed... sort of.

     The sweet potato yields multiple "potato's per plant;" whereas, the yam plant yields one "potato" per plant.  

     There are some other minor differences, like the yam is darker in color and sweeter, but think about it:: In the Yams case- the entire effort of the plant went into that one root.  So now you know...
